Default data extraction

Hi, I am trying to search a server to pull out data by 'date created' to enable me to compare the amount of data created from month to month. E.g. say 12GB in Jan, 4GB in Feb. The goal ultimately is to spot some trends. Can anyone suggest a tool I could download or buy (at a small cost!) to assist with this

Its windows server 2003 im interested in, but I also have some running on 2000. Thanks.
