I am looking to find out how to convert analogue into readable digital plain text.

Hard to explain what i need but heres an example:
to record an analogue signal from a dialup internet connection then convert it later into text on the computer.

I'm wondering if someone could point me into the right direction as to what hardware/software can do this for me.
