Default Choosing Hard Drive- Please Help

I am unsure what harddrive to buy for my future build. What is the difference between IDE 3.5" and SATA 3.5" Drives? Which one is best?

Also what brands would you reccomend out of these and which is least likely to crash?

Western Digital
Seagate
Maxtor
Hitachi
Samsung

Also is it better to have two smaller drives rather than 1 big one?

Two smaller hard drives is better than one hard drive, if you are going to RAID them. Get SATA if your motherboard supports it. The difference is the cable. SATA has a much smaller cable to connect to the motherboard. SATA is also slightly faster in transfer speeds, compared to IDE. I would recommend either Seagate or Western Digital, because they are the top two brands of hard drives.
