i don't really make myself sandwiches, but i've got 2 dishes i love to cook up.

southwestern eggs:
1/2 of a Red, Orange, Green Peppers, cubed up
1/2 White Onion
2 Cloves of Garlic
1 Cup Sliced Mushrooms (any kind)
2-3 Large White/Brown Eggs
5 Slices Yellow Cheddar (extra sharp)
5 Slices Monterrey Jack Cheddar
1 Jalapeno (if you've got them, I usually don't)
And the finishing touches.
Enough Salsa (hot), Queso dip, and tabasco sauce, to taste.

Second dish, the quadruple bypass special.
1 hot dog
1 hot dog bun
1 cup grated cheddar cheese
3 tablespoons sour cream
1/4 white onion
1 clove garlic (chopped or grated or mashed or what the **** ever)

here's the trick, cook the hot dogs with the onion and garlic, put a good amount of butter in so you get that good flavor, then when the dogs are cooked, put in the sour cream to 'deglaze' the pan and then put in the cheese, and it will make a messy sauce, so put the hot dog in the bun and then put it on a big plate, and just pour the sauce over it all. If that doesn't give you rapid succession heart attacks, i dunno what will.
