For forumotion: How would I be able to take a forum I have, and change it to a redirect forum. So if someone were to click that forum, instead of it taking them to all the threads, it redirects them to a link of my desire.

How would I add custom questions to the registration? So I can ask things like:

What is your xbox live gamertag?:

If you could reply with a step tuturial like Step 1 > Step 2 > Step 3 > Step 4. Etc

For IPB, your question #2:

Admin CP -> Management tab -> Users and Groups subcategory -> Custom Profile Fields

From there you can make custom profile fields, and choose to add them to the registration info, or just have them for if members would like to edit their profile wit more information.

In the ACP go under Management. In there when you go under Manage Forums and you select the forum you want to make a redirect forum you edit it settings.

From there you will see the Forum Redirect options. Just select Yes and give it a link.
