I have a few pci graphics cards laying around, am i able to install them in a old mac (powermac 7500) and use instead of the integrated graphics?

I don't think you can use just any PCI graphics card in that Mac; however, Sonnet sells the Sonata SD card for $99, and it specifically says that it works with the 7500:

On some cards its as simple as firmware, on others the differences are more complex hardware changes.
