These Cards/Drives Supported
Are any of these SCSI U160/320 cards supported in Linux to the point that I can boot off of them?
Adaptec AHA-2940W/2940UW
Adaptec 29160N

they are showing in /etc/rc.d/rc.modules so yep they should work

That works then. Will I be able to boot from the drives hooked up to them thoguh?

yes, select appropriate kernel to install, see kernel docs---probably already on yoru system in /usr/doc or on the linux install cd itself
