Default noob questions

i have a few noob questions (my linux is CentOS 4.4)
1] if i have installed a particular program in linux and i want it to appear in the applications menu ,what should i do?
2] i have linux installed and now i want to add packages or applications from the linux dvd using the "terminal" only then how do i go about it?
3] i have a linux server which has a few terminals which have remote booting. now if i want to restrict the access of only a few users to the applications installed on my server HDD then what do i do?

1. Might have to manually edit the K/GNOME menu.

2. I really don't know - you'd have to know the exact name of the package, AND know all of its dependencies. Not really worth it.

3. OpenLDAP/permissions would be my suggestion.
