Default Kubuntu vs Ubuntu?

As a noob, are either of these easy enough and stable to use? Which would be easier for a total noob like me?

Ubuntu and Kubuntu for the most part are the same. the major difference is in the window manager/desktop environment (window manager is part of a desktop environment). Ubuntu uses GDE (Gnome Desktop Environment, more commonly called just Gnome) and Kubuntu uses KDE (K Desktop Environment).

so really it's up to what look and "feel" you prefer.

You'll get better support for problems using gnome because its the default ubuntu.

Agreed.

While I think KDE feels a little faster and more responsive than Gnome, I still prefer Gnome because I know more about it.

You can have both Gnome and KDE installed. Then you can choose which Desktop Environment you want to use when you log in. Try both and choose which one you like best.
