Default Learning Hex Editing

I am in the process of trying to learn Hex editing. I understand the basics of Hex, but I cannot seem to make any of the Hex Editors do what I want them to do. I am trying to learn by altering the code of a game save for an older game with very basic ideas.

I was wondering if anyone knows of any place that has good examples of altering code, teaching skills, or anything that would make this any easier.

Also, does anyone know of a great Hex Editor that you use, I have seen many out there, and tried a few, but I am wondering what is one of the better, or easier to use.

Thanks in advance, Tex

I have always liked Hex Workshop. It's fast and simple.
