Question about CAT6

I'm in the process of replacing my CAT5e cables on my patch panel with CAT 6. They look the same with the exception that the CAT6 cables have a plastic separator. I can cut this off when I am punching my cables down correct?

You can, just make sure you try to keep the twists and seperator as far into the plastic end as possible. It's mostly there to help kill cross talk, and keep the cables inside from twisting around on one another over time.
