I played with gDesklets a little while ago, none of the desklets themselves get installed into the menu so you need to run them 'manually'. If you installed them from a package for your distro they should have been placed in /usr/share/gdesklets, if you installed them as a normal user they should be in ~/.gdesklets. Each desklet has a display file (or it might be .display, I haven't run it in a while), and it's these display files that you need to run, either on the command line or from your file manager. I remember when I was trying them out the docs at the gdesklets site was pretty thin, there is a gdesklet forum at gnomesupport.org though, you might want to check it out.
